Oh how I wish I was on the beach right now, under the warm sun rays and light breeze blowing on the beach in Destin, FL. This cold weather is definitely not my cup of tea. One of the last times we stayed there I cooked up some of this chicken balsamic dinner and made some a few nights ago also. It goes well with spiralized zucchini and squash sautéed in garlic and balsamic vinegar.
3 Chicken breasts
Fresh whole mozzarella, sliced
2 Garlic cloves, minced
3 Tbsp butter
1 Avocado, sliced
2 Roma tomatoes, sliced
Place butter in skillet on medium heat.
Add in garlic.
Place chicken breasts on top. I like to cut my chicken breast in half longways to thin them out.
Drizzle balsamic vinegar on top of chicken to cover.
Place lid on to contain moisture.
When cooked almost through, add mozzarella slices on top to cover, basil, and sliced tomato.
Remove from skillet once mozzarella has melted and top with avocado slices to serve.
